Moong Sprouts Pav Bhaji Enliven your favourite snack by adding a handful of moong sprouts to the pav bhaji and reducing the use of butter. This nutrient rich dish is easy to digest and also rich in flavour. Cooking Time : 10 mins. Preparation Time : 10 mins. Serves 4. Ingredients 8 laddi pav (small squares of white bread) 2 cups moong sprouts 1 cup potatoes, boiled and mashed 1 cup mixed boiled vegetables (carrots, cauliflower, green peas) ¾ cup onions, chopped 1 cup tomatoes, chopped ½ teaspoon chilli powder ½ teaspoon turmeric powder (haldi) 1 green chilli, chopped 1 tablespoon pav bhaji masala 1 teaspoon butter 1 teaspoon oil 2 tablespoons chopped coriander salt to taste How To Proceed 1. Boil the moong sprouts in very little water. Do not overcook. Drain and keep the moong water aside. 2. Heat the oil and butter in a tava (griddle) and sauté the onions until golden brown. 3. Then add the tomatoes, chilli powder, turmeric powder, green chilli, pav bhaji masala and salt and cook for 1 minute. 4. Add the potatoes, moong sprouts, mixed boiled vegetables and coriander and cook for 2 minutes. 5. If the mixture becomes dry, sprinkle the moong water on top. 6. Serve hot with pav.
